Bread That
Remembers
the Oven

Every loaf tells a story of patient fermentation, local grains, and hands that still believe the best things cannot be rushed.

Our Story

We Don't Make Bread.
We Make It Right.

Cedar Forest Mill was born from a simple conviction: that the bread on your table should taste like something real. Not something manufactured, not something preserved for shelf life — something alive with flavor, made the way it was meant to be made.

Located on Straightstone Road in Long Island, our mill and bakery have become a gathering place for neighbors who care about what they eat. We stone-grind our own flour, ferment our doughs for days, and bake in small batches because we'd rather run out than cut corners.

Every morning at dawn, the smell of fresh bread drifts through the neighborhood. That's not marketing — that's just how we do things here.

The Process

Patience Is
Our Secret Ingredient

Whole wheat grains ready for stone grinding
1

Select the Grain

We source heritage and modern wheat varieties from local mills, choosing each batch for flavor and baking performance.

2

Stone-Ground Fresh

Our mill runs slowly, preserving the bran and germ. The result is flour with deeper flavor and better nutrition than anything bleached and stripped.

3

Ferment with Care

Our sourdough cultures are fed daily. Doughs rest for 48 to 72 hours in the cold, developing complexity no shortcut can replicate.

Bake & Serve

Loaded into our deck oven at just the right moment. Baked until the crust sings, cooled, and served the same day — always.
